What to consider when choosing scrapers, screens and stones

  • Griddle plate finish: steel plates tolerate scrapers, screens and stones; chromed and coated surfaces generally need non-abrasive tools, so check the griddle maker's guidance first.
  • Blade width and handle: short 3" to 6" blades give control for spot work; long-handled 15" to 23" scrapers give leverage and keep hands back from the heat.
  • Replaceable blades: choose a scraper with replacement blades available so you can keep a sharp, straight edge without buying the whole tool.
  • Grill vs griddle: charbroiler grates need a brush or shaped scraper; flat-tops need a flat blade, then a screen or stone for finishing.
  • Handles and holders: a handle or holder for stones and screens keeps hands away from hot surfaces and gives even pressure across the plate.
  • Hot or cool cleaning: scraping is easiest while the surface is warm; for screens, stones and griddle cleaners, follow the product directions on surface temperature.

FAQ

Can I use a griddle stone on a chrome griddle?

Generally no. Abrasive stones and screens can damage chrome finishes. Follow the griddle manufacturer's cleaning instructions and use their recommended non-abrasive tools.

How often should griddle scraper blades be replaced?

When the edge is nicked, rounded or no longer sits flat on the plate. A dull blade leaves carbon behind and takes more effort.

What's the difference between a screen and a stone?

Screens are thin abrasive pads held in a holder, good for even scouring of large areas. Stones are solid blocks that remove heavier build-up and wear down with use.

Should I scrape a griddle hot or cold?

Scrape between orders while the plate is warm to remove debris. For deeper cleaning with screens, stones or chemicals, follow the product directions on surface temperature.
