Wusthof's 7" Classic Fillet Knife is forged from a single piece of high-carbon stainless steel. The full tang is triple riveted to the polyoxymethylene (POM) handle that resists fading and discolouration. 

Blade has precision edge technology that is 20% sharper with twice the edge retention. The blade is long and narrow, perfect for filleting a fish and allows the knife to maneuver around smaller bones. It has a full bolster and finger guard for enhanced safety.
