Baking and food molds

Molds shape the things a standard pan can't: half-spheres for entremets, madeleines, financiers, savarins, petits fours, cannoli shells, tortilla bowls and plated stacks. This collection includes multi-cavity silicone molds, tinned and glazed metal madeleine pans, stainless pastry and ring molds, disposable bake-in loaf molds, and puree food molds for texture-modified diets in healthcare kitchens.

Brands include Silikomart, Fat Daddio's, Winco, Chicago Metallic, Gobel, Ateco, Enjay and Puree Food Molds. Find the rest of the Baking Pans & Molds group for cake, loaf, muffin and pie pans.

What to consider when choosing molds

  • Silicone vs metal: silicone flexes for easy release of frozen and delicate items and goes from freezer to oven; metal gives sharper browning and crisp edges, which matters for madeleines and shells.
  • Cavity size and count: molds are sold by cavity volume (for example 0.68 oz, 1 oz, 4 oz) and wells per sheet. Match volume to your portion and well count to your sheet pan and batch size.
  • Support: set silicone molds on a flat sheet pan before filling so they don't bend when moved in and out of the oven or freezer.
  • Temperature use: check each mold's rated range, especially when moving between blast freezer and oven.
  • Disposable vs reusable: disposable bake-in molds remove depanning and washing and double as retail packaging; reusable molds suit repeat in-house production.
  • Healthcare use: puree molds come with lids for freezing and holding; plan quantities by servings per mold and menu rotation.

FAQ

Do silicone molds need greasing?

Usually not for most batters and frozen mousses, but a light spray helps with sticky or low-fat mixes and very detailed shapes.

Why choose a metal madeleine pan over silicone?

Metal conducts heat faster, giving madeleines their crisp, golden shell and pronounced hump. Silicone gives a softer, paler finish.

What are puree food molds used for?

They shape pureed foods into the look of the original item, which helps residents and patients on texture-modified diets recognise and enjoy their meals.

What are bake-in loaf molds?

Disposable molds you fill, bake and sell in. They save on pans and washing and give a ready-to-sell presentation for loaf cakes and quick breads.
